Veggie Christmas dish for both humans and dogs

  • 1 onion, finely chopped (omit for dog)

  • 3 cloves garlic, minced (omit for dog)

  • 4 cups vegetable broth

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • Salt and pepper to taste (avoid adding salt for the dog portion)

Instructions:


For Humans:

  1. In a large pot or Dutch oven, heat some olive oil over medium heat. Add the chopped onion and cook until translucent, then add the minced garlic and cook for another minute.

  2. Add the diced sweet potatoes, chickpeas, diced carrots, diced celery, vegetable broth, dried thyme, paprika, salt, and pepper to the pot. Stir to combine.

  3. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes or until the sweet potatoes are tender.

  4. Once cooked, adjust the seasoning if needed and let the stew sit for a few minutes before serving.

For Dogs:

  1. Prepare a separate portion for your dog by setting aside a portion of the stew before adding any ingredients that might not be suitable for dogs, such as onion, garlic, additional salt and seasonings.

  2. Mix together the diced sweet potatoes, chickpeas, diced carrots, diced celery, and a portion of the vegetable broth.

  3. Serve the dog-friendly portion to your furry friend once it has cooled down to an appropriate temperature.
